1789 — MIYAGI, JAPAN
Founded in Miyagi, Japan, in 1789, Tanaka Sake Brewery carries more than two centuries of craftsmanship. Its roots connect to the Date clan and the kimono trade, with a tradition of careful handwork that continues today.
TXC began with the brewery’s existing classic sakes. After the first vintage, François and the tōji—the master brewer—began experimenting with different kōji and brewing combinations to create variations within that traditional range.
These experiments gave François further possibilities for blending while preserving the identity and craftsmanship of Tanaka’s sakes.
